Light golden-yellow in color with a slight coppery hue. Fine, persistent foam. Hand-harvested. Gentle pressing. Fermentation at a controlled temperature. The base wine is partially aged in stainless steel. Secondary fermentation in the bottle. Aged on the lees for at least 48 months. Low dosage.
The aroma is dominated by red apple, wild berries, and pomegranate, complemented by notes of brioche, toasted bread, Yeast and minerality. Slightly spicy. Subtle berry nuances.
The palate is dry. High acidity. Medium body. Elegant structure. The finish is long. Fresh and slightly berry-like.
Pairs well with seafood, fish, poultry, and light meat dishes. We recommend serving it with tuna, duck breast, carpaccio, or grilled fish.
