Pale straw-yellow in color with a soft effervescence. Traditional method. Hand-harvested into small crates. Gentle pressing. Separation of juice by quality. Settling. First fermentation in stainless steel tanks. Fermentation halted by lowering the temperature. 6 months of aging. Bottling and a second, brief fermentation in the bottle for 1.5–2 weeks. All bottles are disgorged.
The aroma is dominated by apple and pear, complemented by yellow flowers, natural grape sugar, and creaminess.
The taste is sweet, soft, round, and creamy, balanced with freshness. The aftertaste is moderate, fruity, and soft.
Pairs well with desserts and appetizers. We recommend serving it with homemade apple cake and foie gras.
