Light lemon-yellow in color with a greenish hue. Hand-harvested. Gently pressed. Fermented in stainless steel at a low temperature. Brief aging on the lees to add structure.
The aroma is dominated by lemon, green apple, and grapefruit, complemented by white flowers and herbs, along with a light minerality and a hint of almond.
The palate is very fresh, with a light body, high acidity, and a linear, dry finish. The finish is long, citrusy, and mineral.
Pairs well with seafood and as an aperitif. We recommend serving it with oysters, shrimp, ceviche, salads, and light fish dishes.
