Deep golden yellow in color. Fermentation takes place in stainless steel tanks, and the wine is aged on the lees. It then matures for about 10 months under a layer of flor (velo de flor) in Lustau sherry casks. The nose is dominated by ripe apple, pear and dried citrus, complemented by nutty nuances, herbs, a saline and oxidative character and bready notes. The palate is medium- to full-bodied, complex and with moderate acidity. The finish is long, dry, lightly saline and nutty. An excellent match for tapas and flavorful dishes. We recommend serving it with jamón, mushroom dishes, grilled vegetables and baked fish.
