Le Brun de Neuville Côte Brute Œnothèque N°04 Magnum is a Champagne of exceptional maturity that expresses the character of the Côte de Sézanne and the effect of long bottle aging. It combines the structure and power of Pinot Noir with the freshness and elegance of Chardonnay. The core of the wine comes from the 2005 vintage, and the blend is completed with about 20% reserve wines, which add depth and layers to the flavor. The base wine is fermented mainly in stainless steel tanks to preserve the grapes’ pure character and freshness. A small part of the wine matures in oak barrels, giving it extra texture and nuance. The Champagne has spent more than 18 years on its lees, during which a complex bouquet, creamy texture and fine autolytic notes have developed. On the nose you may find ripe apples, dried citrus, roasted nuts and brioche, complemented by nuances of honey, dried fruit and light spice. On the palate the Champagne is dry, rich and layered. Ripe fruit notes intertwine with fresh acidity, minerality and a delicate toastiness. Pinot Noir gives the wine structure and depth, while Chardonnay balances the whole with liveliness and elegance. Long aging on the lees adds a silky texture and complexity. The finish is long, nuanced and with a light nutty and mineral undertone. The Brut style means the Champagne is dry, yet balanced enough to bring out the flavor nuances developed over its long maturation. This is a wine to be enjoyed slowly, giving it time to open up in the glass. With food, this Champagne pairs superbly with oysters, scallops, lobster and other seafood. It also goes well with roast poultry, creamy sauces, mushroom dishes and aged hard cheeses. Thanks to its maturity and complexity, it is also ideal for enjoying on its own on special occasions.
